原料:雞半隻。輔料:洋蔥1/2個、姜一塊、蒜1頭、小米辣10顆、檸檬1/2個、另花椒、芝麻、蔥花適量、冰水1L、冰塊適量。
做法:
1、鍋中加入足夠量的清水(水量要能沒過雞肉),下入洋蔥絲,1/2的生薑片,花椒粒,煮開。
2、水開後,下入雞肉,加1勺料酒,1勺鹽,再煮十分鐘左右,煮至雞肉斷生即可。
——如果買的雞比較大,可以剁成幾塊後再煮。雞肉煮的時間不宜過長,否則肉質會變老。
3、煮雞肉的時候,來準備佐料。將蔥、姜、蒜、小米辣均切末,備用。
另外,提前就必須準備好1L左右的冰水,還有冰塊
4、檸檬切片,泡入冰水中,將煮好的雞浸泡20分鐘左右。水溫上升後,可以加入冰塊降溫。待雞肉完全冷卻後,撈起瀝乾,撕成塊或條狀。
