食品安全一直以來是我國重點關注的問題,為使我國的豬肉市場持續穩定發展、提高監督效率,使得豬肉質量得到保障,讓消費者享有知情權與選擇權。本研究基於RFID(Radion Frequency Identification)技術設計電子耳標,結合中間件技術,對豬個體、胴體和分割部位進行編碼設計,囊括了豬個體的整個生命周期、屠宰、加工和銷售階段的全部信息,利用網際網路進行信息採集與傳遞。系統所記錄的豬個體在養殖、屠宰、加工、銷售各個階段的信息通過手機網路、查詢機進行查詢個體編號,提供正向追蹤與反向溯源所需信息,從而為整個豬肉生產提供全程跟蹤與溯源服務,實現了豬肉產品質量全程跟蹤與追溯,對於提高豬肉食品安全水平具有示範意義。在豬肉可追溯開發過程中,利用RFID技術採集信息準確、識別率高等優點,完成豬個體標識的確立與可追溯系統的建立,本系統貫穿於豬的整個生命周期與生產周期,並在國家規定的編碼方式上進行最佳化調整,用簡潔的方式銜接豬個體編碼進行胴體編碼的設計,對涉及到豬肉肉質安全的所有信息進行記錄與寫入使得消費者方便查詢,不但為消費者的知情權與選擇權提供了保障,還可以進行風險測定與市場評估,使得我國的豬肉產業達到國內規模化,讓每個豬肉產品實現有源可溯。
