酸值

酸值是指用來顯示植物幹性油（DRYING OIL）中游離脂肪酸含量的計量單位——為選擇油料用途的重要考量。酸號表示用於中和每一公克油中游離脂肪酸所需氫氧化鉀的毫克數。較高酸號的油（5到10）適用於研磨顏料，而較低酸號的油（1到3）則更適合作為上光油和其他透明塗料。雖然高號數油利於研磨，但低號數上光油優良的色彩穩定性或不變黃特性，在繪畫用途的油畫顏料生產過程中，更顯重要而備受青睞。

中國藥典中的規定

定義

酸值系指中和脂肪、脂肪油或其他類似物質1克中含有的游離脂肪酸所需氫氧化鉀的重量（毫克數）。

計算公式

酸值是在滴定1克的待測樣品（如生物柴油）時，所需要的氫氧化鉀質量。

I_A以毫克為單位，A是氫氧化鉀的滴定量，單位為ml，N是氫氧化鉀的當量濃度，56.1是氫氧化鉀的分子量，W是待測物的質量，單位是克。

測定法

在測定時可採用氫氧化鉀滴定液（0.1mol/L）進行滴定。

除另有規定外，按表中規定的重量，精密稱取供試品，置250ml錐形瓶中，加乙醇-乙醚（1：1）混合液〔臨用前加酚酞指示液1.0ml，用氫氧化鉀滴定液（0.lmol/L）調至微顯粉紅色〕50ml，振搖使完全溶解（如不易溶解，可緩慢加熱回流使溶解），用氫氧化鉀滴定液（0.lmol/L）滴定，至粉紅色持續30秒鐘不褪。以消耗氫氧化鉀滴定液（0.lmol/L）的容積（ml）為A，供試品的重量（g）為W照下式計算酸值(I_A)：

滴定酸值在10以下的油脂時，可用10ml的半微量滴定管。

The acid value I_A is thenumber that expresses, in milligrams the quantity of potassium hydroxiderequired to neutralise the free acids present in 1 g of the substance.

Dissolve 10.00 g of the substance to be examined, or the quantity prescribed, (m g),in 50 mL of a mixture of equalvolumes of ethanol (96 per cent) R and light petroleum R3, previously neutralised with 0.1 M potassium hydroxide or 0.1 M sodium hydroxide, unless otherwise specified, using 0.5 mL of phenolphthalein solution R1 as indicator.If necessary, heat to about 90 ℃ to dissolve thesubstance to be examined. When the substance to be examined has dissolved,titrate with 0.1 M potassium hydroxide or 0.1 M sodium hydroxide until the pink colour persists for at least 15 s (n mL of titrant). When heating has been applied to aid dissolution, maintain the temperature at about 90 ℃ during the titration.
