做法貼士: 1、雞湯、皮蛋都有鮮味,此菜可免放味素。(如果用的是清水,就要放點味素增鮮了)2、皮蛋後放,皮蛋鮮香味會更足。

莧菜皮蛋湯原料:白莧菜500克,皮蛋(松花蛋)1隻
莧菜皮蛋湯調料:油,大蒜(白皮)2瓣,雞湯一碗(無雞湯就用清水+味素代替),鹽適量
莧菜洗淨,去老根,用手撕成兩段(根歸根放,葉歸葉放),大蒜去皮拍碎。皮蛋去殼,用刀背碾碎,講究點就小心切成瓣吧(刀刃沾醋,皮蛋不粘刀,沾一次醋切一下蛋)
坐鍋,油4成熱時,倒入大蒜中火爆香。
轉大火放入莧菜,先放菜根炒再放菜葉翻炒。
加雞高湯、皮蛋中火煮沸。
煮到莧菜熟軟,皮蛋鮮味飄出即可。

2, Century eggs can be added at the last stage of the cooking, this way century eggs natural delicate flavor will be stronger.
3, A word of caution, amaranth and turtle meat cannot be eaten together, and century eggs will create unhealthy combination of foods with the following items: turtle, plum, brown sugar. So do not put any turtle, plum, brown sugar in this dish.
4, Amaranth has high nutritional value and rich in vitamin C, so avoid long cooking time, and had better close the lid during cooking, to prevent nutrition from being destroyed.
Please follow the detailed steps below to cook amaranth soup with century eggs:
Ingredients: green amaranth 500 gram, century egg 1
Seasoning: oil, garlic (white) 2 cloves, a bowl of chicken soup (use water + MSG if you don’t have chicken soup), some Salt
Wash clean the amaranth, remove old roots, then halve the vegetable with your hands (keep roots and leaves separately);
Skin the garlic cloves and crush them;
Remove the shell from the century egg, and crush the egg into small chunks and pieces with the spine of the kitchen knife, or you may cut the egg into wedge-like shape pieces (think lemon wedge) for visual appeal (apply some vinegar in knife to avoid yolk stick to the blade of the knife);
Heat oil in a wok over medium-high heat until the oil shimmers;
Add garlic, stir fry it until it gives good aroma with medium heat;
Turn to high heat, and add amaranth roots and stir fry for a while, then add amaranth leaves and continue stir fry;
Add chicken soup, then century egg, close the lid, cook it with medium heat;
The dish is cooked and ready for serve when you see amaranth is well-done and soft, and you smell the aroma of tasty century egg.
