花茹田雞,安徽宣城著名的小吃,將田雞腿在開水中抄一下後瀝乾,用薑汁,精鹽,甜米酒,味素醃漬入味。將田雞腿排列在碗中,花菇放在田雞腿上面,加入豬油,雞湯,另用一隻盤子蓋好,上籠旺火蒸15分鐘後取出花菇。將田雞腿翻扣在盤中,花菇排在四周,鍋中湯燒開後用濕澱粉夠薄芡,淋入豬油澆在盤中即可。
