原料:肥瘦相間的豬肉、雞翅、冰糖、生薑、酒糟、紅燒醬油、蚝油、生抽、鹽 肉和雞翅先用水和酒糟浸泡20分鐘,倒掉水,撈出肉和雞翅沖洗乾淨。把肉和雞翅放入高壓鍋,註上適量的水(沒過肉的2/3處即可,不需要淹過食物),倒入酒糟,放入生薑片,蓋上高壓鍋蓋。
大火燒至高壓鍋鳴叫,改中小火燒15分鐘。
15分鐘後,開高壓鍋蓋,倒入紅燒醬油、冰糖、蚝油、生抽,轉中大火收汁。
待鍋中物均勻上色後,嘗嘗鹹淡,酌情加鹽或不加。
不停搖晃過,讓每一塊都入味上色。待汁收得差不多,即可。
