舊庄蚝油 Lee Kum Kee oyster sauce | 1湯勺 1tablespoon |

姜 ginger | 少許 1 inch |
做法
1. 把西冷牛排放在桌上,讓溫度升到室溫Place Sirloin on kitchen table and let steak rise to room temperature | |
2. 把少許姜和蒜切成末Dice the ginger and garlic | |
3. 把黑椒粒現磨成粉狀Freshly grind the black pepper | |
4. 在牛排上淋上橄欖油,灑上黑椒粉和粗鹽,用手把黑椒和鹽壓一壓Drizzle some olive oil on the steak and add freshly ground black pepper and sea salt. Use your hand to gently push the pepper and salt into the steak | |
5. 把其餘的邊也塗上黑椒和鹽Coat the rest of the sides of the steak with salt and pepper | |
6. 在鍋里加點橄欖油,放入姜和蒜末Put some olive oil in a small pot and fry the diced garlic and ginger | |
7. 爆香後,加入現磨黑椒,略炒Once it becomes fragrant, add in the remaining pepper and fry slightly | |
8. 加入一湯勺的蚝油Add in a tablespoon (try to use the more expensive old brand variety) | |
9. 加入三分之一杯清水,煮到汁濃稠Add in one third cup of water and bring to a boil. Boil until the sauce thickens | |
10. 把鍋用大火燒熱5分鐘,然後放入鍋上煎1分半鐘Preheat a grill pan for 5 minutes and sear the steak for one and a half minutes | |
11. 把肉翻面,再煎1分半鐘Flip the steak over and sear the other side for one and a half minutes | |
12. 把牛排夾起,每邊也烤45秒Use a pair of thongs and sear each of the sides for 45 seconds | |
13. 把牛排拿出,擺在盤裡Take out the steak and rest it on the plate | |
14. 把醬加熱,用篩網瀝出Heat the sauce and sieve it | |
15. 把黑椒汁倒在牛排上,便能上桌Drizzle the black pepper sauce and serve | |
16. 牛排中間應該是粉紅的(五分到七分熟)The middle of the Sirloin steak should be pink (medium to medium well) |
