【配料】材料:牛肉80克、青豆50克、蛋清1個。
調料:玉米澱粉2茶匙、料酒1大勺、醋1茶匙、鹽少許、清水500ml。
【製作方法】
1、牛肉剁成肉末,放入一隻乾淨的碗中;
2、加入一茶匙玉米澱粉;
3、加少許陳醋
4、用手抓勻,醃製十幾分鐘;
5、鍋燒熱,倒入少許油,放入洗淨的青豆
6、小火煸炒至青豆表皮發皺,加入料酒,迅速翻炒幾下;
7、一茶匙玉米澱粉加水調和成水澱粉,倒入鍋中;
8、加入少許黑胡椒粉;
9、加水500ml,大火煮沸;
10、水滾之後,加入醃好的牛肉末;
11、待牛肉末浮起,倒入蛋清液,迅速用筷子攪散,呈蛋花狀;
12、關火,盛出之前加少許鹽調味。
