舌尖上的雲霄

2014年8月由雲霄縣返鄉大學生團委文藝部組織拍攝的一部非盈利性的美食紀錄片。這部創意短片時長16分33秒,於2015年7月8號正式在各大視頻網站上傳播,僅僅一天點擊率已達四萬。目前正籌備拍攝第二季。

用鏡頭記錄各式雲霄傳統美食的製作過程,配以富有人文情懷的解說詞,加之感染力十足的後期剪輯包裝,7月10日,一部名為《舌尖上的雲霄》的創意短片一上線,便引來許多網友的追捧,短短一天點擊率便突破4萬次。
舌尖上的雲霄
這部創意短片時長16分33秒。拍攝該短片的是4位在校雲霄籍大學生。因為導演森鑫在聊天群里的一個提議,4個人一拍即合,從選材到錄製到剪輯再到後期製作,花了整整一年時間。據為影片撰寫解說詞的何偉佳介紹,製作短片的過程並不輕鬆,因為4個人都在外地求學,只能利用假期回鄉拍攝,到將軍山上拍燒窯雞,到海邊拍生猛海鮮,走街串巷拍地道小吃,累得夠嗆卻很快樂。“《舌尖上的雲霄》算是我們幾個返鄉大學生獻給家鄉的一份禮物,即便這個片子還有很多瑕疵與不足,卻飽含著每一個外出的雲霄籍學子對家鄉和家人的想念與感激。”森鑫說。

This county is known for where the famous general burried
故郡開漳之地,這裡是雲霄。
My hometown,Yunxiao, is where the exploration of zhangzhou began.
雲霄威惠廟,一座迎納兩岸三地千百年香火的祖廟

每一個背井離鄉的人,記憶中總有一兩種家鄉的美味令其魂牽夢繞
Every alien in strange land will miss one or more kinds of delicious food of hometown
而雲霄的味道是屬於那風煙掩埋的盛世大唐。
and the food of yunxiao could date back to the Tang dynasty (fading from history )
清早,追尋這種美味的忙碌就開始了
Before dawn ,the cook has been busy with the preparation of this famous dish.
燒窯雞又名秀才雞
kiln-chicken,a chicken cooked in the kiln with special spice ,has another name -xiucai chicken.
相傳是一落魄秀才在山間趕路拾得一野雞
The name is come from a folk tale.A poor Xiucai--scholar in ancientChina,was lucky to pick up a wildchicken during his journey.
苦於無鍋無灶突發奇想所創
Since he was in a mountain without any cookers ,he came up with a idea to dig out a kiln and put the chicken in it .
浸過秘制醬料的雞,如同出浴美人
Those chicken after soaking in special spice
一番著裝打扮靜待幸福的降臨
Are ready to be cooked under the soil in high temperature .
紙畢竟是包不住火的,但經過大火燒熱的石頭卻可以代為媒妁
舌尖上的雲霄
While paper can't wrap fire,the hot stone can take the place of coal.
烈火灼燒過的石頭不再冰冷木訥,被賦予了熱情與溫和的性格
Before cooking ,the stones should be burning until they reached the due temperature .
而這一刻的相遇含情脈脈的恰到好處
The hot stone and the well-prepared chicken are ready now.
一層石頭鋪上一層窯雞,餘溫層層交替
A layer of stones overlays a layer of chicken to make sure the transformation of temperature .
當炊具蓋上當沙土填滿,到這時歷經曲折構建才出真正的圓滿。
Until the pot is coverd and the sand is filled ,the whole procedure is completed
炎炎夏日,想驅火降暑理應綠豆莫屬吧
In such hot summer , the best food to calm inflammation in the body must be mung beans
在雲霄有種創自清末,色如白玉,氣味芬芳的小食--綠豆粉粿In Yunxiao ,the most famous mung bean food is the bean-jelly which is white and dates from Qing Dynasty .
在這熙熙攘攘的經堂口分布著很多的刨冰攤
There are lots of stores selling shaved ice in bustlingJingtang Street.
招呼一聲,選好時果佐料
You can choose various nuts and desserts
傾倒上由大塊圓冰被磨打成的冰晶末
Then the storekeeper will shave a block of ice upon the desserts you choose .
澆上蜂蜜或是煉乳,含上一口就沁透心脾,令人暑氣全消。
After adding honey or milk, the tasty shaved ice is ready for you.
如果非得選擇一種味道代表閩南人的鄉愁
If one food should be chosen as the most unforgettable food of MinNan
也許除了菜頭粿便無其二了
It should be Fried white radish patty
當燒熱的鼎器,肆意的潑上一勺豬油頓時香氣四溢
The kitchen is soon redolent of the irresistible smell of meat after adding lard on the hot pot .
清點的菜頭粿在被反覆的煎炸後變得外酥里嫩
The light white radish patty becomes crisp and tender after repeated fried.
不放雞蛋不要蔥花,沾點魚露增鮮
You should not fry it with egg or scallion but dip it in the fish sauce after it is ready,
最質樸最原始的才是最好的美味。
Since the best taste is the original vegetable taste.
時至中午,來上一碗揚名八閩的雲霄水面總是稱意的
You couldn’t miss the well-known Yunxiao noodles in soup for your lunch
滾滾骨湯不加香料,純粹而自然
The soup is nutritional with no spices since pork bone is simmered for a long time
精肉捶打的肉丸在其中沉浮,宛若蛟龍戲珠
The meatballs on the noodles look as if dragons would play the jade ball.
略加點綴,這鹼面爽口,蔥油開胃
Decorated with vegetables and onion, the noodles is refreshing
葷素搭配之下,既不違心背意,也不虛張聲勢,榮辱不驚
The simplest is not the easiest. It contains more than you can expect
這一碗水面正是雲霄的氣度。

醃腸、五香卷、鹹水鴨、活魚鮮蟹,青筍褐菇,敦實禮制,種類繁多
Various kinds of foods are dedicated: pickled sausages, vegetable rolls, salted ducks, fresh fish and crabs etc.
當然除去神壇上的貢品還有諸多看似平常的美味小吃。

I believe different people have different choices.
但煎餃應該是所有人的首選,皮薄餡多,種類齊全
However, fired dumplings with various tastes would be the first choice of you.
撈出在開水中煮到六七分熟的餃子,熱鍋澆上豬油
Put the dumplings on the boiling water until it’s medium well-done,
煎炸至通體焦黃
Then fry those dumplings on hot lard until they become golden yellow.
咬一口是對夜裡轆轆飢腸的慰藉,更是雲霄人對食膾之精細的追求。
You will not only satisfied your stomach but feel the pursuit of dedicated food of Yunxiao people.
民以食為天,這片土地上
Food is the first necessity of the people.
美食是表達對天地神明的敬仰
In Yunxiao, foods show people’s regard of god and nature
更是對離鄉遊子的深深召喚。
And the tastes of them are what the people outside of their homeland miss most.
