項目摘要

枇杷是我國特產水果,果實采後易發生質地變硬、粗糙少汁的木質化敗壞而失去商品價值。至今枇杷果實木質化敗壞的確切機理仍不清楚,因而對其的防治缺乏成熟有效的方法,制約了枇杷鮮果的貯、運、銷和我國枇杷產業的發展。本項目以細胞膜脂代謝變化為主線,以我們前期研究發現的木質化敗壞程度存在顯著差異的兩個枇杷品種果實為試材,通過研究比較不同溫度(1℃,20℃)貯藏和不同處理(CaCl2,1-MCP)果實采後細胞壁物質代謝、活性氧代謝、膜脂代謝和果實品質變化的差異與果實木質化敗壞的相關性,從膜脂代謝的角度揭示枇杷采後果實木質化敗壞的機理及低溫和常溫貯藏木質化敗壞機理的異同,為枇杷果實貯藏新技術的開發和套用提供理論依據,同時推動對非躍變型果實采後衰老生理的研究,豐富果實采後生理和貯藏保鮮理論。
