徽式沙堡雞的烹飪製作方法:
1、土雞處理乾淨加醃料醃製入味;
2、麥芽糖加水熬化備用,將醃製好土雞取出,掛勻麥芽糖水,掛涼8小時,煲內放入炸好的蔥段、八角放入土雞,加蓋;
3、取一舊炒鍋,放入黃沙,將煲放在黃沙上,再加一大鍋蓋,小火燒制4小時即可。
大廚指點:用黃沙的隔熱,將雞焗而且不會糊底。醃製好的雞,一定要涼制,讓雞本身的水汁乾一些,掛糖水是為了成菜色澤好,煲雞時一定要用兩個蓋子。
