The production techniques of Wu Fang Zhai Zongzi, an outstanding representation of traditional Mandarin festive food, are originated in Jiaxing, Zhejiang Province and populated in the whole Yangzte River Delta. In 2011, Wu Fang Zhai Zongzi Production Techniques were shortlisted into the third batch of National Intangible Cultural Heritage items by the State Council.

Zongzi is one of festive food with the most deeply rooted culture in Chinese history. Around 10,000 years ago, humans used plant leaves to wrap food ingredients and cooked them through the hot-rock cookery, which is the prototype of Zongzi. Afterwards, Zongzi has more varieties and more mature production techniques with the change of time, becoming an indispensible part in the daily lives of habitants living in the lower reaches of the Yangzte River.
In the early Republican period, Zhang Jinquan had set up a stall to sell Zongzi in North Street, Jiaxing, which resulted in a great popularity for its unique shape and flavor. Then in 1921, Zhang opened the first Wu Fang Zhai Zongzi shop and gradually became well knownin the lower reaches of the Yangzte River for its exquisitetechniques, thus being honored as “Zongzi King”. After the reform and opening up, the Zongzi industryhas undergone a rapid development.

Wu Fang Zhai has retained the traditional manual skills used for wrapping Zongzi, which follows the procedures as shaping, stuffing, weighing and wrapping. It requires the stuffing of glutinousrice to be put in separate times and with accuratequantity, and the shaping and wrapping to be standard and intact.

Wu Fang Zhai Zongzi has adopted multiple advantages of Zongzi culturein different regions of China, such as Suzhou, Guangzou, Lanxi and Jiaxing. Through constant researchand development, its varieties have increased to about one hundred types from initial several kinds.
