材料:魚頭一個,蔥、姜、蒜適量,紅辣椒2隻做法:
1、魚頭洗淨斬成小塊,用料酒,胡椒粉,鹽,糖,生粉醃十幾分鐘,姜、蒜切碎,蔥切段,紅辣椒切絲
2、平底鍋加油燒熱,先放魚頭慢火煎,一面煎好再翻過來煎另一面,煎的時候濺點酒會更香
3、把煎好的魚頭先裝碟,鍋內余油不用倒出,接著放姜蒜爆出香味,然後倒入事先調好的汁(大半碗水、蚝油2匙,豆瓣醬1匙)煮開,加入紅椒絲,再倒入之前煎好的魚頭稍微翻攪均勻,然後加蓋大概煮1、2分鐘至湯汁濃稠,放入蔥段即可關火。
